Blueberry frozen yogurt

Easy blueberry frozen yogurt for a delicious dessert.


500 g ICONS blueberries
3 tbsp lemon juice
100 g sugar
3 dl yogurt
2 dl cream
wafers for garnish


Keep 50g berries aside for garnish. Mash the berries with a hand blender or in a blender. Mix the berry puree with lemon juice, sugar and yogurt. Whip the cream until stiff and fold it through the berry-yogurt mixture. 

Pour into a large bowl or plastic container and let it freeze half an hour.  Using a whisk or fork, stir in the icy bits from the edges and mix with the softer center until completely smooth.  Place in the freezer for another 30 minutes.  Repeat this process every 30 minutes for up to 3 hours, making sure to whip until smooth before putting it back in to freeze.

When ready to use, serve scoops of ice cream topped with blueberries and wafers.
