Strassberry Tiramisu

Wonderful tiramisu, made with sweet ICONS strassberries.


300 gram strassberries
60 gram icing sugar (+4 tbsp)
150 ml whipping cream
1 vanilla bean (of vanilla sugar)
150 gram mascarpone cheese
180 ml sweet white wine
1 package of lady fingers


In a blender, place 150 grams of strawberries and 2 tablespoons icing sugar; blend to puree.

Cut off the tops of the other strasberries and slice the berries in half. Sprinkle 2 tablespoons sugar over the berries. Whip the cream. Scrape the seeds from the vanilla bean.

In a medium bowl, combine mascarpone cheese, 2 tbsp white wine, the vanilla and 100 gr sugar. Fold in the whipped cream. Arrange half of the lady fingers on a plate. Drizzle 150 ml white wine over the lady fingers and cover them with half of the mascarpone mixture. Scoop the strassberry puree on top of it. Cover with the remaining lady fingers and drizzle the rest of the white wine over it. Spread the remaining mascarpone mixture and the strassberries evenly over the top layer of lady fingers.

Cover the tiramisue and place in the fridge for at least two hours.
