Strawberry Mousse

Made with ICONS strawberries, this mousse is the best.


250 g strawberries, diced
1-2 tbsp sugar
150 g strawberries, diced
50 g sugar
½ tsp lemon juice
150 g cottage cheese
2 gelatine leaves, soaked in cold water
1,5 dl cream, whipped
some strawberries, halved (garnish)


Mix 250 grams of strawberry pieces with 1-2 tablespoons en divide over four glasses.

Puree 150 grams of strawberries with 50 grams of sugar and the lemon juice. Stir in the cottage cheese.

Dissolve the gelatine leaves in hot water. Stir in 2 tablespoons strawberry puree. Mix this with the rest of the strawberry puree. Cover and put in the fridge until it thickens.

Stir the mixture and mix gently with the whipped cream. Divide the mousse over the glasses, cover the glasses and place in the fridge for at least 2 hours.

Garnish the mousse with some halved strawberries, right before serving.
